Ghormeh Sabzi is a traditional Iranian stew that is made with a combination of vegetables, herbs, and meat. Ingredients:
- 1 lb beef or lamb stew meat
- 2 cups of fresh parsley
- 1 cup of fresh cilantro
- 1 cup of fresh chives
- 1 cup of fresh spinach
- 1 large onion
- 4 cloves of garlic
- 1 can of red kidney beans
- 2 tbsp of tomato paste
- 1 tbsp of dried fenugreek leaves (optional)
- 1 tsp of turmeric
- 1 tsp of salt
- 1/2 tsp of black pepper
- 4 cups of water
- 3 tbsp of vegetable oil
Instructions:
Begin by washing and finely chopping all the fresh herbs (parsley, cilantro, chives, and spinach). Place them in a bowl and set aside.
Cut the meat into bite-sized pieces and set aside.
Finely chop the onion and garlic and sauté them in a large pot with vegetable oil until golden brown.
Add the meat to the pot and cook over medium heat for 10-15 minutes until browned on all sides.
Add turmeric, salt, and black pepper to the pot and stir well.
Add the chopped herbs to the pot and continue to sauté for 10-15 minutes until the herbs are wilted and fragrant.
Add 4 cups of water to the pot and bring to a boil. Reduce heat to low and let the stew simmer for 1-2 hours until the meat is tender.
Drain the can of red kidney beans and add them to the pot along with the tomato paste and dried fenugreek leaves (if using). Simmer for another 30 minutes until the beans are heated through and the flavors have melded.
Taste and adjust the seasoning if necessary.
Serve hot with steamed basmati rice.
